Pastry Chef

 

Job Summary:

Prepare bread, pastries, and desserts for daily Clubhouse operations and all special events. Assist the Executive Chef with administrative duties which include but are not limited to, supervision of the A.M. culinary staff, ordering, and inventory.

 

Job Duties and Tasks:

In order to provide the highest level of service to the members and owners of the Club the Pastry Chef will perform the following:

  • Meet the obligations of the Mirabel Mission Statement Objectives
  • Participate in training and supervising the Culinary and Utility personnel
  • Assess daily bakery needs in conjunction with the Executive Chef
  • Review bakery needs for special events in conjunction with the Executive Chef as they occur
  • Assist with regular kitchen duties whenever possible, ie. prep work, line cook assistance, cleaning and organizing kitchen
  • Assist the Executive Chef and Sous Chefs with daily quality control checks.
  • Assist with the purchasing and processing of all food and food-related items
  • Maintain exceptionally high and consistent food quality and value
  • Provide input regarding functions, menus, policies, etc.
  • Assist in the planning and execution of club events
  • Attend any meetings held regarding food and beverage planning when necessary
  • Participate in all Culinary departmental meetings
  • Research and develop ways to reduce the budgeted Cost of Sales while ensuring quality and value
  • Maintain a clean and organized working environment at all times
  • Maintain County Health Department Sanitation and Licensing requirements
  • Contribute to menu development
  • Stay current on the latest F&B trends through certifications, periodicals, associations, and seminars
  • Assist with monthly food product inventories
  • Maintain organized and secure culinary storage areas
  • Maintain efficient and effective purchasing and storage for all food products
  • Assist the Executive Chef and Sous Chefs with equipment evaluation
  • Report all maintenance and or repair needs to the Executive Chef
